    Hi and welcome to our forum. You will need to crush the seed cases to release the seeds...when planting lightly cover the seeds with soil...you could start the seed anytime in trays in a sunny window...use a sterile soil designed for starting seeds.

    Looks like a sunflower! Definitely in the sunflower family...which variety is anyone's guess....there are so many of them.. Let the flower heads mature, and and post a photo when the seeds are ripe...should turn black!

    Crabgrass... Any weed killer will kill it...or you can use a blowtorch...you will need to keep on top of this aggressive weed ...make sure you don't let it go to seed or the problem will grow.....
