This is how I canned my mixed cherry tomatoes. I had yellow, orange, green and chocolate cherry tomatoes. It turned out really nice too.



Dice 3 qts of tomatoes
Dice 2 small onions
chop 3 TSP fresh basil
chop 2 TSP fresh cilantro
chop finely 1 bulb garlic
4TSP lemon juice

Mix together. Add 1 tsp salt, 1 tsp ground cloves, 1 tsp chili powder.

Bring to almost a boil. Pack in hot jars and water bath process for 35 mins.


Do not add any water to the mix. The juice from the tomatoes and the lemon juice is enough. The multicolor tomatoes makes a really festive salsa. I meant to take a picture to post . I will do that Monday.
