Coconut Jasmine Rice


Ingredients

Serves 4

1 cup jasmine rice
1 & 1/2 cups coconut milk
4 kaffir lime leaves
1 bruised stalk lemongrass
1 crushed piece fresh ginger
Salt
Method

Wash rice until water runs clear. Strain.

Place rice into a saucepan, add the rest of the ingredients and stir. Put a lid on and then cook on high for a few minutes. Turn down to very low temperature for 10 - 12 minutes. Take off the heat but keep the lid on until ready to serve.

Before serving take out the lemon grass and ginger and lime leaves.

Serve with your favourite Thai curry:)
 
Sounds good. I always use Jasmine Rice. I have the lemon grass and ginger and can get the coconutmilk but Where do you suppose we could fing the kaffir lime leaves here in the US?
 
Crabber......You can get dried kaffir lime leaves at any asian produce/grocery store over here. Do you have one locally you could try? I planted a tree in my yard a few years ago and they're trouble free:)
