Help Identify this ornamental Cabbage! Please!

Those are ornamental or flowering kale. Do a google search as this would be the quickest way to ID them as there are a myriad of colours and types available. Good luck with your search!
 
Yup, kale. Easy to start from seed. Edible too (if homegrown) even tho it's usually called ornamental. Commercially grown ones might have systemic insecticides etc, so don't eat them.
 
Peacock Kale is a brassica. It is a cool season crop. It may be used as any other kale in recipes. It overwinters well. It benefits from frost which improves its sweetness and color. The one in your picture looks like a cross between a red ( Brassica oleracea 'Red Peacock'} and a white.
You may not be able to match your pics to Google because the color of your kale suggests it has enjoyed some cold nights. I would try to go for a close color/shape match keeping in mind that yours will be more vivid.

Seedman.com has seeds for many varieties including some that have the head on a long stem and can be used as a cut flower! Parks sells seed for peacock too.
 
Welcome realman!

Most seed companies will have brief info on the kale. It is used as borders and accent in gardens.
